Chakuli pitha (Odia: ଚକୁଳି ପିଠା) is made from a batter of rice flour, which is soaked, ground and fermented overnight. Sometimes, black gram (urad dal) and other lentils are added with it for different tastes. The batter is then seasoned with salt and poured on a hot greased skillet to make round flat cakes. The cakes are cooked until golden brown on both sides and then served hot or warm.
Chakuli pitha has a soft and spongy texture and a mild sour taste due to the fermentation process. It can be eaten plain or with various side dishes such as Ghuguni (yellow peas curry), Dalma, Alu Dum, Chicken curry, Mutton curry or with sugar, jaggery, tea, milk, etc. Some people also like to spread ghee or butter on the pitha for extra richness and flavor.
Ingredients for Chakuli pitha:
- 2 cups of rice
- 1 cup of urad dal (black lentil)
- 1/2 tsp of fenugreek seeds
- Salt to taste
Instructions to prepare Chakuli:
- Soak the rice and urad dal in water overnight.
- Drain the water and grind the rice and urad dal to a smooth batter along with fenugreek seeds.
- Add a pinch of salt to the batter and keep it aside for fermentation for 8-10 hours.
- Heat a non-stick pan and pour a ladleful of batter on it and spread it to make a thin circle.
- Cook on both sides until golden brown and crispy.
