To make Odisha-Style Chicken Curry, you will need the following ingredients:
- 1 lb chicken, cut into pieces
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1-inch ginger, finely chopped
- 2 tomatoes, finely chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp oil
- 1 cup water
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan and add chopped onions, ginger, and garlic. Fry until golden brown.
- Add chopped tomatoes and cook until they become soft.
- Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
- Add chicken pieces and stir well. Cook for 5-7 minutes.
- Add water and bring the mixture to a boil.
- Reduce the heat and let it simmer until the chicken is cooked through and the sauce thickens.
- Garnish with fresh coriander leaves and serve with steamed rice.
